Spring Salad

Salad Ingredients:

 

2 cups of washed and quartered radicchio (Italian type of cabbage)

1 cup of washed, sliced snow peas 

4 radishes, washed, sliced thinly

1 cup of fresh or frozen thawed garden peas

100g of greek fetta, crumbled

Dressing Ingredients:

​

2 tablespoons of red wine vinegar

juice of half a fresh lemon

1 teaspoon of mustard

1 teaspoon of honey

2 tablespoons of olive oil

Optional, a few sprigs of fresh mint or parsley

Method:

​

blitz or stir the dressing well to combine. 

Put all the salad ingredients into a bowl excluding the fetta. Pour over the salad dressing, toss to combine and crumble fetta on top.

​

Makes 4 side serves.
